Retro Chardonnay Chicken
Serves 4

Ingredients from Claremont Fresh
- 1 tsp. Jingilli Devine Olive Oil
- 4 chicken thighs - skinless from The Meat Show Case - Claremont Fresh
- 2 cloves crushed garlic
- 1 medium onion chopped
- 150 gms WA button mushrooms
- 3 sticks celery sliced
- 2 medium capsicums diced (any colour)
- 1 tbls. plain flour
- 1 cup of Salitage white wine
- 1 tbls tomato paste
- 8 spring onions chopped

Pre-heat pressure cooker, add oil, cook garlic, capsicum, celery and onion until soft add chicken thighs then mushrooms.
In a small bowl combine wine, tomato paste and flour whisk thoroughly until combined.
Pour over chicken and vegetables pop lid on and cook for 8-10 minutes.
Once cooked stir though spring onions at the last minute and serve with mashed potatoes or boiled rice.

Goes nicely with a glass of Pinot Noir from Treehouse yum yum
