Martin's BBQ Retro steaks with 'honey, thyme & mustard glaze'
Serves 4

4 Harvey Beef fillet steaks
5ml Avocado Oil
2 tablespoons honey
1 tablespoons Whittington's thyme
2 tablespoon Whittington's Dijion mustard
200ml any white wine from Salitage
Salt and pepper to taste

1. In a frying pan heat oil to very hot and cook steaks how you like
2. Place steaks in a warm place and rest while making the sauce
3. Add remaining ingredients, wine, honey, thyme & mustard to same pan
4. Simmer, uncovered until sauce thickens
5. Serve sauce over steaks with green salad and a glass of Salitage Chardonnay

Martin's Retro Rollette Trifle

1 packet jam rollettes
cup sherry
85gm packet of strawberry jelly
1 carton cold set custard
1 cup whipping cream lightly sugared to taste
Fruit to decorate
Toasted nuts

Cut rollettes in 1.5cm slices and arrange in to a glass or large dish. Pour over sherry, then dissolve jelly in hot water, place in dish and set in the fridge. Pore over custard top with sweetened cream. Finish off with fruit and toasted nuts.
