Orange Almond and Banana Cake
Serves 8 - 10

This cake has no flour or added fatů impossible, fantastic for people allergic to wheat

You'll need a lined 26cm spring formed tin.

9 The Good Egg Eggs
375grams Sugar
2 large Oranges Cooked and Pulped
450grams Almond meal
10 grams Baking Powder
3 - 4 Large Australian Bananas's to decorate

1. Boil oranges in water until soft drain and pulp then set aside
2. Whisk eggs and sugar until light and frothy (about 5 minutes)
3. Add warm orange pulp to the egg mix whilst whisking
4. Pour in almond meal,baking powder and whisk for a further 1 minute
5. Place into a greased lined baking tin and bake in a per heated oven 180 deg for 25 to 35 minutes
6. Test cake with a knife.. cool.. then turn out
7. Decorate with Australian Banana's

Martin's Tip: When baking using eggs always use eggs at room temperature.
