Serves 4

This recipe comes from England…well it's Chinese originally, but when I was growing up this was the most popular 'take away'. It's basically an egg dish made from seafood but this can be made from any meat, personally I prefer lamb.

Ingredients
4 Good Egg eggs
200gms snow peas
1 red onion cut in ½ and sliced
Dash Soy sauce
50gms Sesame seeds
2 cloves Garlic - sliced
Small dash Avocado oil
1 mild Chili (optional) chopped
Thumb size piece Ginger chopped
Small hand full of button mushrooms sliced
Coriander chopped
Then from the Star Of The North butcher's, get 200gms strip Lamb

Method
1. Heat wok then add avocado oil
2. Cook garlic, ginger, and onion for 2 minute until caramelized.
3. Add lamb and brown
4. Add snow peas, mushrooms and sesame seeds, again cook for a further 1 to 2 minutes.
5. Last add the beaten eggs… let settle about 30 seconds then fold though until all the egg mix has cooked and coated everything.
6. Serve with chopped coriander, extra sesame seeds, and if you like, a dash of extra soy sauce.
