Banana custard Calfoutis
Serves 8 to 10

This dessert sounds very French and complicatedů far from the truth this is basically a banana custard tartů. the hardest part is the pastry and even that's available at the super market.

You'll need 22cm false bottom deep tart tin (quiche tin)

500 grams short sweet crust pastry
5 Good Western Australian Eggs
375 ml Cream
375 ml Milk
10 ml Vanilla
80 grams Sugar
3 large Australian Banana's

1. Roll out pastry and line tart tin then 'blind bake' until lightly baked - about 10 minutes.
2. Cut and line banana's evenly on the tart base.
3. Mix eggs, milk, sugar and cream until combined being careful not to froth
4. Pour liquid into tart and top with cinnamon (optional)
5. Bake in a pre heated oven 180 deg until golden brown and set.
6. Allow to cool before turning out.
7. Decorate with extra Australian Banana's and dust with icing sugar.
8. Serve warm with freshly whipped cream.
