Serves 6

This is a fantastic full flavour Indian meal..a great dish for the weekend, especially when it's getting a bit cooler.

Ingredients
6 Lamb chump chops from Star Of The North in Currambine
3 tablespoons plain flour
2 teaspoons chili powder
˝ teaspoon ground coriander
˝ teaspoon of ground ginger
Pinch of nutmeg
˝ teaspoon of salt
Dash Western Australian organic Avocado Oil
3 onions sliced
600ml beef stock
4 tomatoes diced
250ml yogurt
4 cardamom pods


Method
1. Mix flour, chili, ginger, nutmeg, salt and coriander
2. Coat Lamb chops in the flour mix and seal in a hot pan with some Avocado Oil then place to one side
3. Add onions and brown lightly then add ˝ of the remaining flour and stock cook for 1-2 minutes
4. Add yogurt, cardamom pods and chopped tomatoes
5. Place Lamb back into a frying pan with a lid or heat proof dish cover and cook in the oven for 2 hours at 180degs
6. Half an hour before completion cook up some basmati rice

Serve in deep bowls….delicious!




Banana with minted sugar
Serves 4

You must try this one, so simple but so effective you wouldn't believe fruit can taste this good.

Method
1. Peel 2-3 Australian bananas
2. Cut the bananas length ways into thin slices and place on a plate
3. Take some fresh mint and place in a pestle and mortar and bruise
4. Add some caster sugar and mix until it goes green
5. Sprinkle over bananas and leave at room temp for 5 minutes
6. Serve with quality WA natural yogurt yum yum

This dessert is fantastic after spicy food. Try with pineapple or mango… enjoy!!!
