Recipe 4 Mothers Day
This takes me back to when I was growing up, and that treat on mother's day or for that matter almost every Sunday in Newcastle my hometown. Dad cooking his famous Lamb roasts, the smell of roast dinner though the house, so why not get the family together and spoil mum with Martin's.

Easy Carve Leg of Lamb with Rosemary and mint and Roast
Serves 4 - 6

Ingredients
1.5kg boneless leg of lamb from Star Of The North in Currambine
Then pop into Joondalup Fresh Market and get:
6 potatoes cut into
4 carrots cut into strips
4 cloves garlic
Salt and pepper
teaspoon of cumin
Small hand full Rosemary
hand full fresh mint
Dash of Avocado oil

Method
1. Place your rosemary, mint, sea salt and cumin in a pestle and mortar and start bruising.
2. Pour in Avocado Oil, bring together.
3. Place lamb into baking tray, pick up mixture and ring out over lamb rub all over leg.
4. Peel and chop vegetables place around lamb with garlic season.. lightly.
5. Cook in a pre-heated oven 180deg for 20-25 minutes for rare, 25-30 medium or 30-35 well done. NB this cooking time is per 500gms.

Hints and Tips
1. All ways let roast rest for 10-15 minutes in a warm place before carving.
2. Always use a pinch of cumin with red meat, associated with curries but mixed with red meat brings out a fantastic flavour.
3. Pre-heat the oven.




Chocolate Banana brulee
Serves 4 to 5

Ingredients
2 medium roughly chopped ripe Australian bananas
250ml pouring Cream
80 grams Sugar
5 Good Egg Eggs
1 teaspoon of vanilla
Grated chocolate

Method
1. Combine with a whisk bananas, cream, sugar and eggs together (do not froth)
2. Pour the filling into heatproof dishes, grate chocolate on top then stir in with spoon.
3. Bake for 20 to 25 minutes. Place in a pre-heated oven of 180 deg turning the tray around after 15 minutes until set.
4. Serve warm with cream or ice cream.

Try different flavours, lemon, orange or vanilla.
