Fish with orange and ginger sauce
Serves 4

This one only takes 2 to 3 minutes excellent for a main meal or a light lunch
We recommend you perhaps select your fish at Joondalup Fresh Market

Ingredients
4 gummy shark fillets
1 orange and zest
Thumb size for ginger
3 to 4 spring onions
Avocado oil
Salt and pepper
1 cup of fish stock

Method
1. Take your gummy fish fillets rub avocado oil into the fish and season lightly
2. Drop the fillets into a very hot pan then turning over after 1 to 1 ˝ minutes
3. Then add 1 cup of fish stock, spring onions, ginger and orange zest & juice cook for a further 30 seconds.
4. Serve on top of an undressed garden salad …sauce will dress it…. "beautiful"



Banana and tropical fruit parfait
Serves 4

Parfait comes from the European dessert made from fresh cream this one I'll be making from yogurt

Ingredients
4 Australian Bananas
Pulp from 4 passion fruit
Juice from 4 oranges
Natural Yogurt (you must try this yogurt from Joondalup Fresh Market)

Method
1. Slice ripe bananas into pieces and drizzle with passion fruit and orange juice.
2. Bake in the oven at 180c or microwave for 3 minutes on high or pan cook for 5 minutes on high
3. You'll need some tall glasses for this one. Spoon the mixture into the glass layering it with some natural yogurt, decorate with fresh strawberries… "fantastic"
