Roast chicken breast with Capsicum salsa
Serves 4

For this dish Martin suggests you visit the Joondalup Fresh Markets and get:-
1 red capsicum
1 yellow capsicum
1 red onion
Salt and pepper
Olive oil
Pinch of cumin
2 to 3 tomatoes
Fresh Basil or Spring Onions
4 skinless chicken breasts

1. Finely chop 1 red and 1 yellow capsicum.
2. Add 1 small red onion and 2 to 3 tomatoes, finely chopped.
3. Add salt pepper and a pinch of cumin, normally associated with curries but when added to red meat or tomatoes it give's a fantastic taste.
4. Add a generous amount of olive oil and mix gently!
5. Garnish with finely chopped fresh basil or spring onions.. throw that in, that's it"

"For the chicken, rub with a little avocado oil, season on both sides. Do not season this too much as all the taste is in the salsa.

Choc Bread and butter pudding
Serves 4

6 old croissants
Castor sugar to taste
4 The good Egg eggs
50gms dark chocolate buttons
100ml cream
100ml milk

This one is definitely retro food at its best chocolate bread and butter pudding I remember mum buttering the bread and stacking in a dish adding the sultanas. This can be a bit messy so I've simplified it some what and I've added my own special twist.

1. Mix eggs, milk, cream and sugar together.
2. Roughly chop croissants and place them into a bowl pore over egg mixture and let soak for 5 minutes.
3. Add chocolate buttons, fold though then place into oven prove dishes.
4. Bake in a pre heated oven on 180 deg for 10 to 15 minutes until set.
5. Dust with icing sugar and serve warm with cream or ice cream.
