Cooking with Embers

Into the Retravision kitchen once again this week with West Coast Eagle, Andrew Embley.  This time Cooking With Embers features very little cooking, but he creates a decadent dish, Oysters with Mango and Mint Salsa.

Whilst cooking, Andrew let us in on his secret to a tidy kitchen  - the Asko dishwasher.  Using a dishwasher uses much less water than washing dishes by hand and using only 14 litres per load, the Asko is one of the most energy efficient dishwashers in the world.  
Its power wash cycle is so efficient, it doesn't need a rinse cycle.

Oysters with a Mango and Mint Salsa


  • 12 oysters

  • 1/2 mango finely diced

  • 1 shallot finely diced

  • 6 mint leaves finely sliced

  • 1 red chilli finely diced

  • 2tbs red wine vinegar

  • splash of olive oil

  • 1tblsp lemon juice

  • salt & pepper



Mix together all your ingredients and then add generous amount of salsa to each oyster
