Seafood Chowder

Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 6  to 8 people


100gm Smoked bacon pieces
4 TBL Extra Virgin Olive oil
4 hard boiled Golden eggs
2 Leeks, split in half then chopped
8 Royal blue potato, chopped
4 Tbsp Plain flour
500gm Fish pieces  (choose a firm fish)
500ml vegetable or chicken stock
200gm Mussels
The kernels off 2 Sweet corn cobs
500ml Milk
1/3cup Italian parsley chopped
Salt & Pepper and Tabasco to taste


1.    Using a heavy base pot set on low heat brown bacon until crispy in Olive oil.
2.    Add leeks and potato, cook out until the potato is tender and starts to collapse.
3.    Stir in fish pieces and braise for 4 minutes or fully cooked.
4.    Add the flour – sprinkling around.
5.    Add stock, mussels, corn and simmer for 5 minutes till the mussels open.
6.    Thin out by adding enough milk to get the right consistency.
7.    Add chopped parsley, eggs and season to taste.
8.    Serve with an Italian loaf for dipping or if you like, hot garlic bread smothered with pesto
