Open Fish and Salad Sandwich

Limes and Melville Seafood

Preparation time:    15 minutes
Cooking time:              5 minutes
Serves:          6  to 8 people


100gm chili jam
3 tbsp white balsamic vinegar
3 tbsp Dandaragan Extra V Olive oil
1/3 cup chopped basil
Sea-salt & pepper
Process in blender until smooth then season to taste.

Salad mix from Limes
500gm Melville Seafood fresh white fish
2 tsp Red Cajun seasoning
Grape seed oil for cooking the fish
1 Turkish flat bread
50 gm Parmesan cheese for sprinkling over the top
4 hard boiled Golden eggs

1.    Use a non stick pan on medium heat.
2.    Prepare your salad by placing in a large bowl for tossing.
3.    Pat dry the fish fillet. Dust the skin side of the fish with spice mixture.
4.    Spread a little grape seed oil on top of the spiced fish.
5.    Place the fish spice side down first for 4 minutes without turning then flip over and do the other side for 1 minute.
6.    Toss in half of the dressing through the salad.
7.    Then place plate the flat bread, top with salad, then the fish slightly broken up.
8.    Garnish with cut up boiled eggs
9.    and finish with the rest of the dressing.
