Bubble and Squeak with Swordfish


Recipe by Martin Gillespie Retro Chef
Limes and Melville Seafood

Preparation time:    10 minutes
Cooking time:              15 minutes
Serves:           4 to 6 people

4 sword fish cutlets
2 - Chorizo sausages cubed
2 red onions thinly sliced
2 Golden eggs
3tbsp extra virgin olive oil
½ cabbage thinly sliced
1 bunch chopped chives
100gm grated parmesan cheese
½ cup chopped Italian parsley
1kg peeled potato’s boiled

Method
1.    Pre heat a large wok or frying pan on medium heat. Toss in chorizo sausage dry without any oil cook until crispy, remove and keep warm.
2.    Caramelize onion in olive oil then return crispy chorizo to the wok, add and cook cabbage until tender.
3.    Add chives, cheese, eggs, parsley, and potato and combine well. Then fry in olive oil until golden brown.
4.    Heat pan, add olive and seasoned sword fish cook for 2 to 3 minutes on either side
5.    Serve with bubble and squeak topped with chives and olive oil.
