Green basil mash potatoes
Preparation time:        10 minutes
Cooking time    :        25 minutes steamed
Pressured steamed:        12 minutes @ full pressure

Prep list

800g kestrel potato 1/8th cubed, skin on
3 cloves peeled garlic
300gm cubed basil pesto cheese from Herdsman Inspiring Food
¼ cup Dandaragan olive oil
½ cup chopped parsley
Splash of milk
1 Golden Egg
Salt and pepper


Pressure cook kestrel potatoes with a little bit of garlic for 12 minutes or until a soft and smooth texture.  Pop the steaming potatoes into a large sauce pan and very roughly crush them with a potato masher.  Next, switch to a wooden Beachwood cooking spoon and start mixing like crazy, while mixing in all the above ingredients / flavours until smooth and creamy.  You can add a little milk if the potatoes are a little starchy. Serve with your favourite steamed vegies and meat of choice.  

More added cooking pleasure try “Mash brown potato”

With the left over mash you can make a burger potato, dust them in polenta lay them on some baking paper, brush with olive then bake in a hot oven for 15 minutes until crispy golden brown. WOW!
