Recipe NO 4 - Retro Fish and Chips (with beer batter)

Serves 4
Cooking time 10 minutes

For the batter
2 Golden Eggs, separated
¾ cup Beer, room temperature
2 Tbsp Dandaragan Olive Oil
¾ cup plain Flour
Salt to taste

Place egg yolks in mixing bowl, whisk, add salt, oil, and beer then add flour. Stir batter until thoroughly mixed. Cover bowl with plastic wrap and allow it to rest in the fridge for at least 2 hours, 24 hours is better. Just before using batter, stir it well again.
In a separate bowl, beat egg whites until fluffy but not dry; gently fold egg whites into your batter. The batter is good for about 6 fish fillets, depending upon their size.
Gently lower into pre-heated oil at 180c

For the chips – these should be pre-cooked prior to fish!
4-5 Royal Blue potatoes cut into thick chips/wedges or desired size.
Leave skins on for better taste

Pre Heat oil up to 140c fry chips for 5 minutes until soft not brown.
Reheat oil to 180c cook chips until brown and crisp serve with the fish.
