Recipe NO 1 - Grainy wine mustard Baby Snapper with Potato and Egg salad

Serves 4  - Cooking time 15 minutes

The salad
3 - 4 un-peeled Royal Blue or Ruby Lou pre-cooked potatoes, cut into bite sized pieces.
3 boiled Golden Eggs peeled and cut in half
1 punnet of cherry tomatoes cut in halves
1 bunch asparagus blanched
Hand full of mixed lettuce or rocket
50gms crumbled feta cheese
Snow pea sprouts to garnish

The Dressing
½ cup Dandaragan Olive Oil
1 Table spoon Whittington’s Grainy wine Mustard
1 crushed clove of garlic
2 tsp white wine vinegar
Salt and pepper to taste

While fish is cooking, combine salad ingredients in a large bowl.
Pour over dressing mix.
Mix well.

Fish - baby snapper. Skin on or off, you choose.
Fern Grove wine
Dandaragan Olive Oil
Salt and Pepper to taste

To Cook Fish
Heat pan add olive oil until warm, season fish with salt and pepper skin side then fry skin side down until fish turns white on the outside of the fillets. Turn then add white wine add lid and turn off gas do not over cook. Serve on top of the salad with several blanched Asparagus spears.
