Retro's Christmas Sausage Skewers and Warm Potato Salad


Serves 4 people

Ingredients
1kg of British Sausage Company Sausages, I like the Boerewors 
1 punnet Cherry Tomatoes
1 red onion roughly chopped
1 packet of skewers

For the salad
1kg Royal Blue Potatoes skins on and pre boiled 
4 boiled Golden Egg eggs cut in half
A good dash of Fini Olive Oil
1 can of 4 bean mix drained
Small handful basil ripped
Small handful parsley ripped
Salt and Pepper to taste



Method
Cut the Boerewors into 1 inch lengths. Slide onto the skewer, then a cherry tomato, onion and repeat this about 3 times until skewer in full. Cook on a medium heat on a Calphalon grill plate. While the skewers are cooking, start the salad. Place olive oil in a warm pan then add potatoes, beans and herbs gently heat, season to taste. Just before serving add boiled eggs and a little extra olive oil. Serve straight from the pans in the middle of the table complimented with a delicious glass of Salitage wine.
