Martin’s Retro Beef Roast, Potatoes and Yorkshire Puddings



Serves 6 to 8


Ingredients

First Pre heat the oven to 200’C.

Prepare the roast
1.5kg Blue Waters Beef Topside or Blade roast 
1 jar 250gms of Perth’s Mustards Company grainy wine mustard
Salt and pepper
Dash of Fini’s olive oil
Pinch of Whittington’s ground cumin
1 kg Royal Blue potatoes skins on 

Method
   
Coat the top of the meat with the jar of mustard. Season with salt and pepper. Add several pinches of cumin to the roast..Nice and even. Finally drizzle with Fini’s olive oil. Add ¼’rd potatoes to Roasting Dish.

A guide for cooking beef (Per Kilo) 45 minutes to 1 hour for rare, 1 hour to 1¼ hour’s for medium and 1¼ hour’s to 1 ½ hours for well done. Hint ..Always rest the meat before carving

Yorkshire Puddings

Ingredients

285 millilitres milk
60 grams all-purpose flour
60 grams self-raising flour
Pinch salt
3 Golden egg eggs
Fini Olive oil for cooking

These can be made prior to or after the Roast.

Method
Preheat oven to 230 degrees C. Mix the batter ingredients together by hand or in a blender. Let rest for 10 minutes Preheat a Yorkshire pudding tray or muffin tin with 1/2-inch (1 centimetre) of olive oil in each section. After resting the batter for 10 minutes divide into the tray. Cook for around 15 to 20 minutes until crisp and puffy, don't open the oven door before then completion or they won't rise. Serve with your Blue Waters - Roast Beef and Royal Blue potatoes. Don’t forget, and heaps of gravy and your favourite Salitage Wine.
