Retro meat loaf


500g Royal Blue potatoes and cooked and mashed
Fini Olive oil
½ teaspoon Whittington’s ground Cumin
1 cup breadcrumbs
½ onion, finely chopped
½ cup parmesan cheese
1 tblspn fresh basil, chopped
2 Golden egg eggs, lightly beaten
2 cloves garlic, crushed
500g lean Blue Waters minced beef
1/3 cup tomato sauce
1 tblspn Worcestershire sauce
Salt and pepper

Combine cumin, olive oil, breadcrumbs, onion, parmesan cheese, basil, eggs, garlic, tomato sauce, Worcestershire sauce, mince, salt and pepper in a large bowl and mix well.
Spoon mixture into a Calphalon pan. Bake in a preheated 200°C oven for 30 minutes until the meatloaf is browned all over.
Mash potato. Spread over meat loaf. Bake a further 15 minutes to complete cooking and brown the potato topping. Serve with Salitage wine
