This year I will be showing the best of the Turquoise Coast from bush to beach - this place is perfect for that romantic weekend away.

Martin’s best ever bubble and squeak (bangers and mash)
Ready to eat in 15 minutes
Serves 4 to 6


  • Use Thick or Square Pork Sausages from British Sausage Company

For the mash

  • 6 Royal Blue Western Potatoes skins on and cut for easy cooking.

  • 1 Golden Egg farm egg (for the bubble and squeak) 

  • Dash of Fini Olive oil

  • ½ a Small head of cabbage chopped finely

  • 4 carrots peeled and chopped

  • 25ml cream

  • 10gms butter

  • Salt and pepper to taste


Boil potatoes, carrots and cabbage separately until cooked
Drain off water; add a little Fini olive oil and butter (this will bring out the flavour of the oil) then mash
Season with salt and pepper; add cream and the egg fold in.
Cook sausages on a low heat in a Calphalon pan
Separately, add a little Fini olive oil to separate pan and add serve size of B&S mixture – heat and brown both sides. 
Plate up with British Sausage Company pork sausages on top - add gravy of choice.

Goes really well with a with quality drop from the Salitage wine range.
