Retros - Rosti Potatoes


Ready to eat in 10 minutes - Serves 6

Ingredients
200ml yogurt
2 table spoon's horseradish cream
1 table spoon chopped fresh dill
1 teaspoon finely grated lemon rind (or orange)
5 medium Ruby Lou Western Potatoes
1 clove of garlic crushed
Black pepper to taste
1/4 cup chopped fresh chives
1 Golden Egg Farm egg, beaten lightly
35 grms plain flour
Vegetable oil for shallow frying


Smoked Salmon & ‘creme fraiche’ toping.


Method



  1. Combine yogurt, dill horseradish, cream in small bowl set aside

  2. Grate potatoes coarsely squeeze out excess moisture

  3. Combine potatoes in large bowl with garlic, pepper and chive's, egg and flour - mix well

  4. Heat Gillett Grove olive oil in medium frying pan cook 1/4 cup measures of potato mixture in batches until brown on both sides and crisp drain on absorbent paper

  5. Place 1 x ‘Rosti’ on serving plate top with 1 or 2 slice's of Smoked Salmon and 1 table spoon ‘creme fraiche’ repeat…3 times and finish each stack with third Rosti and remaining ‘creme fraiche’ (Easy)
