Retro’s own Simple Spanish Omelet


Serves 2 – ready in 10 minutes

Ingredients

4 golden egg farm eggs
500gms Ruby Lou potatoes (par Boiled) then sliced
Dash of Gillett Grove Olive oil
Small handful of grated cheddar cheese
1 large onion chopped
100gms frozen peas
Salt and pepper
1clove of garlic

Method



  1. Pour a little olive oil into the non stick Argyle Diamond-T fry pan

  2. Add chopped onion with crushed garlic cook over a very slow heat until soft.

  3. Place slices of the Ruby Lou potatoes and continue to fry until they are heated through.

  4. Season with salt and pepper

  5. Lower the heat slightly and pour the beaten eggs on top and stir lightly with fork to give an even cook - add cheese.

  6. Flip the omelet in the middle and cook for a further two minuets (I find it much easier to place under a heated grill ) if you double the ingredients you can serve it into slices I like to add some fresh chopped chives to my egg mixture enjoy!


This is great with a chilled glass of Chardonnay from Salitage yum yum!
