Martin’s Best Ever ‘Seafood and Potato Salad’   

Serves 4 – Ready in 20 minutes 

200gms Ruby Lou potatoes diced and cooked
3 boiled Golden Eggs cut in half (to decorate)
150gms cooked prawns (cut butterfly) 
2 tsp. wasabi paste
80gms low-fat natural yoghurt
½ iceberg lettuce, shredded
100gms Cherry tomatoes, halved
½ yellow capsicum, thinly sliced
1 celery stick, trimmed, thinly sliced
5 spring onions, thinly sliced
10 pitted olives, thinly sliced
Lemon wedge to serve
Finish with drizzle Gillett Grove olive oil available from Boatshed Dewsons Applecross


  1. Boil potatoes until tender. Drain. Cool.

  2. Combine wasabi paste and yoghurt in a bowl Place lettuce in a serving bowls.

  3. Top with ‘cubed’ potatoes, tomatoes, capsicum, celery, prawns, onions, and olives.

  4. Drizzle with dressing and olive oil then serve with lemon wedges.

Over 200,000 people visit the area annually.
