Retro’s fish pie


Serves 6

Ingredients
5 large Ruby Lou potatoes, peeled and diced (Mashed)
Salt / pepper
2 Golden Egg eggs (hard boiled)
1 onion, finely chopped
1 carrot, finely chopped
Gillett Grove extra virgin olive oil
285 ml double cream
2 good handfuls of grated mature cheddar cheese
Juice and zest of 1 orange
1 heaped teaspoon grainy wine mustard
1 large handful of flat-leaf parsley, finely chopped
455g fish, skin removed, sliced into strips or Cervantes crayfish

Method


  1. Slowly fry the onion and carrot in a little olive oil for 5 minutes using your Argyle Diamond-T non stick grill pan, then add the double cream, fish, mustard parsley and orange and bring to the boil.

  2. Remove from the heat and add the cheese and eggs and mix together,

  3. Spread the mash potato on top of the fish mixture. Place in the oven for about 25-30 minutes until the potatoes are golden.

  4. Serve this is great with a chilled glass of Chardonnay from Salitage to order click on the Salitage logo!



Tourist Tip
Sea Lions are a major tourist attraction in the Jurien Bay Marine Park. They have fluctuating large colonies, mainly cows and juveniles. There were once large colonies of Sea Lions on the islands off Perth, before sealers nearly exterminated them in the early 1800's. Today it is mainly bulls that inhabit the islands off Perth. The Bulls migrate north to join the permanent resident cows and juveniles at Jurien Bay every mating season.  Call Jurien Drive on 9652 1109
