Retro – ‘Baked bean hash’

Ready to eat in 10 minutes - Serves 6


Dash of Gillett grove olive oil available from Boatshed or Dewsons Applecross
4 Golden Egg Farm WA eggs
6 Ruby Lou Western Potatoes mashed (skin on)
420gm tin baked beans
2 rashes bacon
2tsp parsley


  1. Place mashed potato in a non stick Aida frying pan  

  2. Mix together the rest of the ingredients (beat eggs first) then mix in Baked Beans, finely chopped Bacon and parsley.

  3. Pore into the fry pan on top of the potato

  4. Cook in pre-heated oven at 190deg until set
