Retro Warm Prawn and White Bean Salad

Ready to eat in 10 minutes - Serves 4 to 6


3 boiled Fresh WA Golden Eggs chopped
4 medium Ruby Lou Western Potato’s pre boiled (skin on)
100ml Gillett grove olive oil available from Boatshed, Dewsons Applecross
60grms rocket leaves
250gms cherry tomatoes
200gms cooked prawns
425 can butter beans, rinsed, and drained
1 small onion, thinly sliced
2 spring onions – ends trimmed
Small handful flat leaf parsley
2 tbs fresh dill
2 tbs fresh lemon juice
¼ cup of black olives


  1. Combine all the ingredients, except the lemon juice and olive oil, in a large glass bowl

  2. Divide among serving bowls,

  3. Drizzle with lemon juice and olive oil, and then serve
