Potato, cheese and Chive Frittata

Ready to eat in 20 minutes - Serves 4

3 medium Royal Blue Western Potatoes thinly sliced
6 Fresh WA Golden Eggs lightly beaten
Dash of Gillett grove olive oil available from Boatshed, Dewsons apple cross
Handful of low fat grated cheese
Small bunch of parsley
Salt and pepper to taste
1 medium red onion thinly sliced
2 cloves garlic crushed
Small handful of Whittington’s chives
Extra parsley to garnish


  1. Combine eggs, cheese, chives and salt and pepper

  2. Fry onion, garlic in olive oil in a nonstick Adia fry pan until softened. Add potatoes

  3. Pour in egg mix and cook until slightly set

  4. Place in a preheated oven 200deg or grill until completely set and brown

  5. Serve with extra parsley and a green salad
