Martin's pan-fried Fish with dill
Serves 4
Fish from Trevelen Farm

- 4 pieces of Travelen farm salt water rainbow trout fillets
- fresh lemon
- cup signature range cream
- tsp. grainy wine mustard from Perth's Mustard Company
- Small handful of fresh dill
- 1 tablespoon of butter
- Jingilli olive oil for cooking

Dry off fish fillets with kitchen roll, this will prevent the fish from sticking to the frying pan.
Place a little off the olive oil on your finger tips and rub it into both sides of the fish.
Season with salt and pepper.
Heat frying pan until hot this will also prevent the fish from sticking.
Add fish to the frying pan, skin side down, cook for 1 minute and turn over, add butter, cream, mustard and dill cook for a further 1-2 minutes depending on thickness of the fish (do not over cook fresh fish).

Serve with a wedge of fresh lemon, green salad and a chilled glass of Bellarmine 2004 Riesling from Pemberton log onto
