Martin's Retro "esca" Pasta
Serves 4

- 455 grams Signature Range spaghetti
- 2 cloves garlic, finely chopped
- 1 small handful capers
- 1 Jingilli olives, pitted and sliced
- 8 anchovey fillets, roughly chopped
- 1 small red chili, chopped de-seeded
- 1 small handful oregano
- Large dash of Jingilli Leccino Olive oil
- 2 cans diced tomatoes
- 1 good handful fresh basil
- Salt and freshly ground black pepper

Cook the pasta in salted, boiling water. Meanwhile fry the garlic, capers, olives, anchovies, chills and oregano in a little olive oil for a few minutes.
Add the tomatoes, bring to a simmer, and continue to cook for 4 or 5 minutes until you have a thick tomato sauce consistency.
Remove from the heat, plunge the pasta into it, toss it over, and cover with the sauce.
Rip basil over the top, season with pepper, and drizzle with evoo from Jingilli (Leccino).
Serve with Pinot Noir form SALITAGE
