Retro's best ever raspberry and white chocolate muffins

Makes 6 Large muffins

Ingredients
- 1 kg Signature Range self-raising flower
- 8 Signature Range barn laid eggs
- 500 ml Signature Range milk (or other)
- 350 gms Signature Range butter (melted)
- 500 gms Signature Range frozen raspberries
- 350 gms brown sugar
- 150 gms white chocolate roughly chopped

Method
Mix flour, brown sugar and chocolate together until combined.
Add all the liquids including melted butter, add this to the flour mix and mix to a soft batter.
(Note: Do not over mix at this stage).
Lastly fold through the raspberries.
Drop into lined muffin tins bake in a pre-heated oven to 180 degrees for 20-25 minutes, test with a skewer or small knife.
Turn out on to a wire rack serve warm with fresh cream MMMM....

These can be frozen for 3 months......
